I scoured the internet looking for NSA Granola recipes and they all looked pretty lame. Weird ingredients and, most of them didn’t use Splenda or anything like that.    Sooo, I decided to make my own.  First time worked like a charm.  Uh-Mazing.  So, I’m sharing it with the world, although I might start selling it to the world.

Ingredients:
1 1/4  c Splenda the kind that measures cup for cup with sugar, not packets 🙂granola
1/4 c Vanilla
1/8 t Almond Extract (optional)
1/4 t Salt (optional)
6 dashes of Cinnamon
1 c Old Fashioned Oats (not instant)
1/2 c Almonds (crushed or sliced)
1/2 c Salted Peanuts (crushed/chopped)
1/2 c Sunflower Seeds
1/8 c Butter Flavored Sugar Free Pancake Syrup
1/4 c Raisins, Craisins, Dried Cranberries or Dried Blueberries (will add sugar)
Preheat oven to 300
Syrup
1 1/4  c Splenda
1/4 c vanilla (if you double the recipe, still keep 1/4c vanilla)
1/8 t almond extract
1/4 t salt
6 dashes of cinnamon 
Combine all syrup ingredients in a medium saucepan.  Cook 5 mins on setting 2 on the stove…stirring occasionally.
Granola (feel free to change the ingredients, but keep the total amounts the same)
1 c old fashioned oats (not instant)
1/2 c Almonds (crushed or sliced)
1/2 c Salted Peanuts (crushed/chopped)
1/2 c Sunflower Seeds
Stir granola ingredients in the syrup pot after it has been cooked for 5 mins.  Stir 1/8c of butter flavored sugar free pancake syrup until everything is well coated.  If your ingredients are too dry, you can add a little more, but you don’t want it soupy or you will wind up with sticky granola.
Pour onto a baking sheet and press flat to about 1/4 to 3/8 inch thick. Bake for 12 mins on 300. Stir with spatula.  Bake 12 more mins and stir.  Then bake 12 more mins at stir.  Granola should be dry at this point but if it isn’t, bake and stir at 4 minute increments.
Pour warm granola into a bowl.  If you are going to add 1/4 cup craisins, dried cranberries, dried blueberries or raisins, now is the time to do it.  Once cooled, store in mason jar or other air tight container.
